If You’re Bummed About Summer Ending, Treat Yo Self with These Easy Dessert Recipes

As summer comes to a close, we’ve rounded up a few easy, delicious recipes that’ll cool you down during the next few weeks of heat. As an added bonus, they’re all vegan!

The first recipe is for Toasted Marshmallow Ice Cream, courtesy of Chocolate Covered Katie (who is a master of easy and healthy desserts.) Her recipes make it easy to control how sweet you want the end result to be, and she even includes helpful instructions on what to do if you don’t have an ice cream maker.

 

 

Next is one-ingredient ice cream. Yes, you read that correctly: one ingredient. A post brighthorizons.com suggests cutting up slightly overripe bananas, freezing them, and then putting them in a food processor or blender to create an ice cream-like consistency.  

 

The third recipe, for a very appealing Concord Grape Sorbet, comes to us from the Etsy blog, and only requires three simple ingredients: 2 pounds stemmed concord grapes, ¼ cup cane sugar, and 2 tablespoons of fresh lemon juice.  

 

Other tasty-sounding desserts we saw were cheesecake ice cream (from vegweb.com) and mango lemonade (from yummly.com) Do you have any favorite summer dessert recipes to share?
