Bookmarks of a Blog Junkie: And lots and lots of zucchini.

I’m a wanna-be foodie; absolutely love reading food blogs and cookbooks. But as a college student I never really have the time nor the ingredients to make much of anything. That and I have a horrible habit of making things and never eating them myself. I just feed them to everyone else.

So I mostly just content myself with drooling over the scrumptious food photos and recipes. Here are some of my favorite foodie blogs that are just chock full of pictures and recipes!

Now, since I have a major sweet tooth (like major major), I like to have my dessert before I have my dinner . Recently I stumbled upon The Food Librarian, which features many many sweets to try. (Coffee jell-o!) The blog definitely appeals to my fascination with small bite finger food munch munch munchies.

Another very sweet blog is Cake…or Death? The blog not only has amazing looking foods (#1 requirement), but a handful of rather humorous photos from the author’s adventures and misadventures in baking.

Now just because I am prone to stuffing my face with sweet things doesn’t mean that I don’t enjoy my savory foods. My favorite blogs for savory foods are the sister

 sites are Just Hungry and Just Bento. Just Hungry features mostly Japanese home-cooking and foods. Just Bento is dedicated to traditional and non-traditional bentos (Japanese boxed lunched) for health and weight-conscious adults. Of course, both are mouth watering reads. Sadly, I don’t have many savory-type blogs on my bookmark list, but there is a very very long list of food blogs of many types at Food Blog Blog for you to peruse.

Of course, this list is not complete without This Is Why You’re Fat. My absolute guilty pleasure. I mean, just looking at some of these creations give in indigestion!

On a similar, but healthier, note it’s about the time of the year when my familie’s garden is overflowing with so much squash and zuchinni we don’t know what to do with it.

I love zucchini, but there’s only so much I can stand it in cooking. So on to baking! Have a yummy zucchini bread recipe from Closet Cooking.

Ingredients:

1 1/2 cups zucchini (grated, squeezed and drained)

3/4 cup brown sugar

1/4 cup oil
1/2 cup vanilla yogurt
1 egg
1 cup all purpose flour
1/2 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup walnuts (chopped)
1/2 cup raisins

Directions:

1. Mix the zucchini, sugar, oil, yogurt and egg in a bowl.
2. Mix the flours, baking soda, baking powder, salt, cinnamon and nutmeg in a bowl.
3. Mix the wet and dry ingredients.
4. Mix in the nuts and raisins.
5. Pour the batter into a greased 5X9 inch loaf pan.
6. Bake in a preheated 350F oven until a toothpick pushed into the center comes out clean, about 50-70 minutes.
