How To Eat Pumpkin Like a Pro This Fall!

If you were ever categorized as “basic” by the Internet, perhaps you are lamenting the loss of pumpkin in your diet this fall as you construct a less PSL-dependent existence. Whatever, HATERS GONNA HATE. The lack-o’-jack-o’-lantern food is a shame given the pulpy nutrients inside: one cup of cooked, mashed pumpkin has 245% of your daily vitamin A and 16% of your daily potassium (not that you were getting that in your latte).

Don’t give up on that pumpkin. Here is a hypothetical menu to eat pumpkin all day in the most un-basic way (except for dessert, because pumpkin was made for pie).

Breakfast: Pumpkin and Feta Muffins from 101 Cookbooks

 

Lunch: Chili Pumpkin Cranberry Risotto from Post Punk Kitchen

 

Cocktail Hour: Sparkling Pumpkin Cider Beertail from Brit+Co

 

Dinner/First Course: Black Bean Pumpkin Soup from Smitten Kitchen 

 

Dinner/Second Course: Pumpkin Kibbeh from One Arab Vegan

 

Dessert: Ginger Pumpkin Pie from the kitchn
